The Spanish Association of Processors and Packers of Spices and Seasonings (AEC) is a non profit association founded in 1980, whose mission is to improve the conditions under which member companies operate. The association, which has 15 members, is dedicated to inform continuously the members about current issues in the sector, represent their collective interests to the administration and other agencies or entities, support the members by developing activities to improve their competitiveness, and ensure the quality of marketed products and the satisfaction of spices consumers. The Technical Commission, composed of technical positions of each company, debate all matters within its scope. The AEC is a small Association formed by the president, Eduardo Pallé, and the secretary, Teresa Lara.

AEC coordinates the European project SAFFIC about saffron, and has carried out different workshops for training and diffusion of the results of the project among its members. This project originated from the necessity to control these fraudulent practices and to develop new methodologies to modify the current ISO norm introducing standards and reliable procedures to fight against the fraud.
